Ingredients:
- 1 cup dried California apricots (do NOT use Mediterranean –they are too sweet!)
- 2 cups flour
- 2 tsp flour
- 3 TBSP margarine
- 1 cup sugar
- ¾ cups orange juice
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup nuts (pecans or walnuts)
- 1 egg, slightly beaten
Directions:
Soak apricots in lukewarm water for 3 minutes – grind. Mix all ingredients and place batter in greased loaf pan. Bake 325 until toothpick comes out clean.
