Apricot Bread

Ingredients:
  • 1 cup dried California apricots (do NOT use Mediterranean –they are too sweet!)
  • 2 cups flour
  • 2 tsp flour
  • 3 TBSP margarine
  • 1 cup sugar
  • ¾ cups orange juice
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup nuts (pecans or walnuts)
  • 1 egg, slightly beaten
Directions:
Soak apricots in lukewarm water for 3 minutes – grind. Mix all ingredients and place batter in greased loaf pan. Bake 325 until toothpick comes out clean.
My momma received this recipe from her grandmother in 1958.
