Ingredients
- 5 c. flour
- 2 c. sugar
- 2.3 c. light brown sugar
- 12 oz. or 1 qt. Raisin Bran
- 5 tsp. baking soda
- 2 tsp. salt
- ½ tsp cinnamon
- ½ tsp. allspice
- 4 eggs beaten
- 1 c. oil
- 2 medium apples –cored and finely chopped
- ½ c. pecans –chopped
- 1 qt. buttermilk
Directions
Mix flour, sugars, soda, salt and spices together in a large bowl. Blend in Raisin Bran. Add eggs, buttermilk, and oil and blend thoroughly. Fold in apples and pecans. Bake in greased tins or baking cups for 15 minutes, or until done at 400 F. Makes 4 dozen muffins.
*Batter will keep in refrigerator for 4-5 weeks.
