Salmon Mousse

Ingredients:
  • ½ cup heavy cream, whipped
  • 1 envelope unflavored gelatin
  • ¼ cup cold water
  • ½ cup boiling water
  • ½ cup mayonnaise
  • 1 TBSP fresh lemon juice
  • 1 TBSP plus 1 tsp grated onion
  • ½ tsp tabasco
  • ½ tsp salt
  • 2 TBSP finely chopped capers
  • ½ tsp paprika
  • 2 cups fresh salmon, poached, chilled, boned and finely ground
